Tarsus Sarıulak Olive

An olive that is not the same anywhere else but its own soil

Some products carry the traces not only of the soil they grow in, but of its climate, water, sun, and the culture shaped over centuries. Originating in the Tarsus district of Mersin, Sarıulak is a local olive variety integrated with Tarsus's unique climate and ecology. Tarsus Sarıulak Olive was registered with a geographical indication as a 'designation of origin' in 2018. Its geographical boundary is the Tarsus district.

It is not only its name that makes it special.

Tarsus Sarıulak Olive continues its existence by being propagated from olives grown in the Tarsus region through grafting and cuttings.

For us, the olive is not just an agricultural product.

The Sarıulak variety can show different characteristics in different ecologies; its inability to show its high physiological traits in the same way
once it leaves Tarsus is one of the most striking signs of the deep bond this olive has with its soil.

Tarsus Sarıulak Olive Oil

The geographical indication registration certificate states that the oil obtained from Tarsus Sarıulak is a light greenish-yellow color and has a strong fruity aroma. At Ebru’s House, we preserve the value of this ancient variety by embracing a production approach that does not overshadow the olive's own character.

Early harvest, cold pressed, and natural extra virgin olive oil…

Inside the bottle, there is more than just olive oil; there is the story of the Tarsus sun, the soil, and the Sarıulak tree. For this reason, the fact that Tarsus Sarıulak Olive is protected by a geographical indication is not just a document for us; it is a guarantee given to the agricultural memory of a region. Our duty is to protect this heritage as it is, carry it into the future with our nature-respecting production approach, and bring the true story of Tarsus Sarıulak to your tables.

Ebru’s House is a true olive story from Tarsus.

Because some tastes can be produced elsewhere.
But some stories only live in the soil where they were born.
